I’m sure most of you remember the traditional Rice Bubble slice from when you were growing up…..? I definitely do, especially at birthday parties. We all loved it when we were kids. So I set out to create a healthy alternative that tasted just as good so the kids could enjoy it! The traditional slice was made up of sugar, butter, honey and rice bubbles so I have substituted these and opted for whole food ingredients that result in a slice that kids both big and small will love. Easy Gluten Free Kids Pizza Base
An easy dinner option that the kids will love.
Who doesn’t like pizza…..? I’m sure most of you reading this love pizza’s. And if you don’t, your kiddies will.
This is a super simple allergy friendly pizza base. It only takes around 5-10mins for the base and is gluten free, dairy free, egg free, vegan and soy free. And another 10mins once the toppings have been added. So quick and easy when you are short on time or if your kiddies are hanging around you wanting dinner ASAP. Its quicker (and healthier) than ordering pizza for delivery!
Banana Oat Cookies
Super simple and healthy Oat Cookies that the kids will enjoy making and eating.
Now firstly I want to point out that this recipe is NOT Gluten Free. Whilst I am Coeliac and most of the food eaten in our household is Gluten Free, Stella still has oats for brekkie in her Porridge and Bircher. As a result of this, I know she loves them so I thought why not make her a cookie that is healthy enough for her to snack on all day long. However, I have included a gluten free option as well.
I only wish that I could eat oats. Oats are one of the most nutritious grains. They are a great source of vitamins, minerals, fibre and antioxidants. They have a low glycemic index, maintaining blood glucose levels keeping you fuller for longer. Whilst most people who are gluten intolerant are fine with Oats, I would recommend that Coeliacs steer clear of them. Many Coeliacs do not react to oats in terms of feeling any physical symptoms however irreversible damage can still occur, in other words they can be toxic to people with Coeliac disease. Read More

So I’ve been a little busy recently with the new addition to our wee family. But I’m still getting to the kitchen when I can to experiment with a few recipes. I just haven’t found the time to post. While I was in nesting mode (towards the end of my pregnancy) I prepared a few meals for Stella (2 1/2 years) and James & I. The idea of worrying about meals each night with a newborn was and is not ideal.

Banana & Pineapple Mini Muffins
A quick, easy and tasty treat that the whole family can enjoy.
Stella (2 years) absolutely adores muffins (as do the rest of the household). I wanted to create a healthy sweet treat for her that I could make in bulk and freeze. The bonus about mini muffins is that they don’t take long to defrost.
For baking I steer clear of white flour and sugar and find much healthier & nutritious alternatives. For example white flour alternatives I tend to use in my baking include almond flour, buckwheat flour, brown rice flour, quinoa flour etc and I’m sure you are aware of the substitutes for sugar.
