A healthy take on the classic Lemon Slice.

I think I’ve mentioned this before but I really LOVE lemons!  And lucky for me, lemons are in season as its winter in NZ.  Our lemon tree is full of lemons which means our fruit bowl is over-flowing with lemons waiting for me to incorporate into more tasty and healthy recipes that I can share with you all.

I used to love the classic Lemon slice so I decided to recreate this dish into a healthier version which was still super tasty.  I removed the sugar, butter and refined flours and replaced these with healthier alternatives which resulted in a healthier yet still very delicious Lemon Slice which got the tick of approval from the family. Banana & Blueberry Bread

Banana & Blueberry Bread

  • Servings: around 12 slices
  • Difficulty: easy

I’ve always loved banana bread/cake. I remember eating both throughout my childhood, however, I would hate to think of all the refined ingredients and sugar that was probably used to make these recipes. As a result, I wanted to make recipe that was not only healthy but of course super tasty – so that you wouldn’t even know it excluded the usual refined ingredients in most store brought banana breads. As a result, this banana bread is healthy enough to have for breakfast, a snack or dessert. Not only is it gluten free, its also dairy free and refined sugar free. I have also included an egg free option. Read More

Ginger & Lemon Crunch

Ginger & Lemon Crunch

  • Servings: Around 18 small pieces
  • Difficulty: easy
  • Print

A quick and easy, tasty slice using two flavours that complement each other so well - ginger and lemon.

This recipe uses one of Hunter Gatherer Gourmet’s Paleo cake mixes for the base – The Ginger cake mix. I have tweaked this in order to make more of a crunchy ginger base (vs. a softer cake base). The best thing about this recipe (and these mixes) is that you will not be able to tell that this is a healthy, unprocessed and refined sugar free crunchy ginger base.

I combined this with a creamy raw lemon icing which includes the addition of a lemon essential oil which takes this flavour to the next level. Of course if you don’t have lemon essential oils on hand, I have provided alternative options. But I would highly recommend the addition of this oil!”  Read More

Lemon & Coconut Slice

A quick and easy healthy sweet slice combining two of my favrouite ingredients - Lemon & Coconut.

I love anything flavoured with lemon and I’ve mentioned before how much I love coconut – this recipe combines both. Definitely a great baking combo! We always have lemons on hand at home and I use them throughout the day, starting the day with a glass of water with lemon juice, with Avocado for breakfast, over salads and in my herbal teas. In terms of Coconut, I also use this throughout the day, when I have Bircher in the morning and over salads for lunch/dinner. I also obviously love creating recipes which include both ingredients. Salted Caramel and Buckwheat slice

  • Servings: 18 bite sized squares
  • Difficulty: easy

A decadent chocolate, buckwheat and coconut base with a salted caramel layer on top - a tasty and simple treat the whole family will enjoy yet full of nutrient dense ingredients.

I always love experimenting with raw slices and I love coconut, chocolate and caramel. So why not combine all three which go together so well. I created this decadent recipe and also included some very nutrient dense ingredients to boost the appeal even more.

The inclusion of activated Buckwheat means that this recipe is bursting with nutritional benefits. Buckwheat is a gluten free wholegrain and with the increased awareness of gluten free diets, this powerful wholegrain is becoming a very popular ingredient in gluten free recipes and used in many interesting ways. You will find that I often include Buckwheat in a lot of my recipes especially my healthy refined sugar free (RSF) sweet treats.

Overnight Bircher

Overnight Bircher

  • Servings: 1
  • Difficulty: easy

An easy overnight Bircher recipe, perfect for the warmer months.

I have a couple of go to breakfast options in the morning and this is definitely one of them especially on those days when I don’t have much time in the morning.  It only requires a small amount of preparation the night before and its good to go in the morning topped with your choice of fresh fruit.

This recipe is a great combination of plant based protein, essential fats and complex carbohydrates which are slowly digested keeping you fuller for longer.  The soaking of the ingredients also means it is much easier to digest helping to increase nutrient absorption.  Much better than a store brought cereal for breakfast which is often full of added sugar and refined carbohydrates with minimal nutrients.
