A quick, easy and tasty treat that the whole family can enjoy.

Stella (2 years) absolutely adores muffins (as do the rest of the household). I wanted to create a healthy sweet treat for her that I could make in bulk and freeze. The bonus about mini muffins is that they don’t take long to defrost.

For baking I steer clear of white flour and sugar and find much healthier & nutritious alternatives. For example white flour alternatives I tend to use in my baking include almond flour, buckwheat flour, brown rice flour, quinoa flour etc and I’m sure you are aware of the substitutes for sugar.

I first fell in love with polenta fries at one of myfavourite restaurants in Auckland and decided that I wanted to be able to whipthese up at home.

What I really like about Polenta fries, is that they arefirstly super easy and also very versatile and can be eaten all year round – Insummer, at a BBQ and in winter with a roast. They can also be eaten as a snack – serve with a Mexican salsa or someguacamole. They can also be prepared theday before and cooked when you are ready to serve. I always love to whip up a smoothie when I’m short of time or on the go. And Berry smoothies are definitely my ‘go to.’

This creamy berry smoothie is so quick and easy and super tasty.

You can use fresh of frozen berries. I usually use frozen berries. Frozen berries also result in a much thicker smoothie which I like.
